This recipe is my take on a childhood favorite — now with a light cream cheese whipped frosting for a modern twist. 🍰 Ingredients For the Ube Chiffon Cake: 1 cup cake flour (or sifted all-purpose flour) 1 ½ tsp baking powder ½ tsp salt 1/4 cup white sugar 4 egg yolks 1/4 cup vegetable oil 1/3 cup whole milk 2 tsp vanilla extract 2 tsp ube extract Meringue: 4 egg whites ½ tsp cream of tartar or (¼ tsp vinegar) 1/3 cup sugar For the Ube Cream Cheese Whipped Frosting: 8 ounces cream cheese 2 cups heavy whipping cream (chilled) ½ cup + 2 tablespoon white sugar 1–2 tsp ube extract 1 tsp vanilla extract 1. Preheat your oven to 340°F (170°C) and lining your pans with parchment paper—do not grease the sides. 2. In a bowl, whisk the egg yolks, sugar, milk, oil, then add the flour, baking powder, salt, vanilla, and ube extract until smooth. 3. To make the meringue. In another clean, dry bowl, beat the egg whites with cream of tartar until foamy. Gradually add the sugar and continue beating until stiff peaks form. 4. Gently fold the meringue into the ube batter, taking care not to deflate the mixture. 5. Pour the batter into the prepared pans and bake for 15-20 minutes. 6. Once out of the oven, immediately invert the pans, take the cake out to prevent deflating. 7.For the frosting, whip softened cream cheese until smooth, add the sugar and vanilla extract, then slowly add the heavy cream and beat until stiff and fluffy. Add ube extract for extra flavor and color, if desired. 8.To assemble, level the cakes, spread frosting between the layers, and cover the entire cake. Decorate with ube crumbs or macapuno.
