Join my members page for more videos and updates: / @iamdaria Shop my art: www.dariamundi.com RHUBARB UPSIDE DOWN CAKE RECIPE: For rhubarb layer: 3 large rhubarb stalks (the redder the better) 1 tbsp of softened butter 1 tbsp (20g) of sugar For the batter: 135g of sugar (I prefer brown) - increase if you prefer sweeter cakes zest of 1 lemon 2 eggs 100g of melted butter 150g of yoghurt or sour cream 180g plain white flour 1 tsp baking powder 1 tsp baking soda pinch of salt (skip if using salted butter) Optional: powdered sugar for topping I'm using an 8" (20cm) cake tin for this recipe, Cut the rhubarb to fit into the bottom of your cake tin. Set the remaining rhubarb aside. Butter the pan well, sprinkle with sugar. Layer the rhubarb on top and set aside for later. Combine sugar and lemon zest - rub together until fragrant. Add eggs and whisk. Then add butter and yoghurt. Add flour, baking powder and soda through a sieve. Combine well with a silicone spatula. Chop whatever rhubarb you have leftover and add into the batter. Pour on top of your rhubarb layer. Place into the preheated oven for 50mins at 170C/ 340F. Bake until golden and toothpick comes out clean. Once the cake is ready, turn it upside down onto a place and remove the tin bottom. It's best if you can layer the bottom of the tin with parchment paper (before buttering and sprinkling with sugar), but if you buttered well then it should come off easily.
