In today's slow living vlog, I'll be sharing with you what I've been up to these cold winter days. Make yourself a hot cup of tea and join me as I cook potato leek soup, bake bread, go to the bookstore, make pumpkin chai tea, and more! I hope you're keeping warm during these next couple of winter months :) 🌻 My Instagram: morning_thyme 🎼 Music from: https://www.epidemicsound.com 🥔🍲 Potato + Leek Soup Recipe (3-4 servings) Ingredients: 3 medium size potatoes (peeled + chopped ) 1 leek (sliced) 2 cloves garlic (sliced) 1 tbs olive oil 1 cup dairy of your choice (I used half heavy cream + half whole milk) Chicken broth (enough to cover potatoes) Salt and pepper Bacon + chives for garnish In a small pot, sautee garlic and leek with olive oil on medium high heat until they're cooked through (about 5 mins). Add potatoes and sauté another minute. Add chicken broth, just enough to cover potatoes. Bring to a boil then reduce heat to simmer. Cover pot and cook for about 30 mins or until potatoes are thoroughly cooked. Turn off heat. Use an immersion blender or regular blender and blend potatoes until you have a creamy and smooth texture. Add milk and stir. Salt and pepper to taste. Feel free to use bacon and chives as garnish. Enjoy! For the vegetarian version, simply switch out chicken broth for vegetable broth and use plant based milk instead. Omit bacon. 🥖 No Knead Artisan Bread Recipe is inspired by: https://www.thecomfortofcooking.com/2... 🎃🍵 Pumpkin spice chai tea 2 cups whole milk 1 tbs pumpkin puree 1 tbs black tea 1 stick cinnamon 3 slices ginger 4 cardamom pods 1/2 tsp cloves 1 whole nutmeg honey to taste 1/2 tsp vanilla extract Put all ingredients into a small sauce pan and simmer on low heat.
