Are you a big fan of queso? I do think it should have its own food group! This is a recipe for an easy to make SMOKED QUESO! The smoking of the queso takes it to the next level. Ingredients: 1 (2 LB) Package of Velveeta Cheese (I used their Queso Blanco) Cut Into One Inch Cubes 2 Cans of Fire Roasted Tomatoes with Chile's (Drained) 1 Bell Pepper - Diced (I used 1/2 of a Orange and 1/2 of a Red Bell Pepper) 1 Cup Diced Onion 2 Jalapeno's - Seeds and ribs removed - Diced Finely) 1 LB of Ground Beef (Cooked/Drained) Prepared with Taco Seasoning 1 Cup Mexican Blend Shredded Cheese Directions: Set Up Smoker for 250 Degrees - Preheat Make sure your pan will fit in your smoker before you assemble. Place all of the ingredients in the order listed above into the pan you will use in the smoker. Once assembled, place the queso in the smoker Stir every 30 minutes to combine melted goodness Once ready garnish with cilantro, and add some pico and sour cream in the middle (optional) Tip: If you need to thin the mixture add a little milk and stir.
