Welcome back to Ragged Coast's Kitchen! Today, Kate is sharing her mom's go-to holiday treat—Rum Balls. These nostalgic goodies are simple, delicious, and perfect for spreading holiday cheer. ¾ cup white corn syrup 12 oz (1 pkg + 1 ounce) vanilla wafers (note: Things change over the years, and it turns out that the Nabisco vanilla wafers box is now only 11 ounces; not the 12 ounces it was back when my mom was making this recipe. my experiment with the 11 ounce package made a rum ball that was a little too soft. You'll want to adjust by adding either more vanilla wafers, or less rum and corn syrup) 1 ½ cups conf. (powdered) sugar 3 Tbsp cocoa 1 ½ cups finely minced nuts (I use walnuts) ¼ + 1/8 cup rum Crush wafers. Work in rest of ingredients. Dust with conf. sugar. Make balls size of walnuts. Stand out overnight. Roll in conf. sugar. Pack in tight box.
