Another super easy and delicious Christmas recipe,moist and absolutely delicious!!If you are a dried fruit lover,this is the cake for you!!!#fruitcake#christmas 300g/2 1/2 cups Whole wheat flour or regular flour 60g/1/2cup ground almonds 150g/10tbsp butter at room temperature 100g/1/2cup whole brown sugar 100ml/1/2 cup milk at room temperature 1 tbsp baking powder 4 eggs at room temperature 1tsp cinnamon 1/4tsp cardamom A pinch of salt 50g/1/3cup candied orange peel 50g/1/3cup candied lemon peel 80g/1/2cup raisins 25g/1/4 cup currants 25g/1/4cup cranberries 50g/1/3cup chopped apricots The zest of an orange and of a lemon 3 tbsp rum Pour hot water over the dried fruit ,and let them sit for 15 minutes. Combine together the flour,baking powder,salt,cinnamon and cardamom,set aside. Beat the butter and sugar until creamy,add the eggs and beat until incorporated. Add the zest of the orange and lemon, rum and the almonds,and beat until well incorporated. Slowly add the flour,and when well combined ,add the milk. Combine and pour the mixture into a greased and floured loaf pan,spread evenly, and bake it in a preheated oven at 180c/350f for 55/60 minutes ,or until a toothpick comes out clean. Let it rest 10 minutes in the pan and completely on a wire rack.
