Jowar ka Dhokla - Gluten-free Recipes Another gift from Gujarat. This time it’s a Gluten-Free. You can now make Dhokla from Jowar too.. Enjoy with Mint Chutney. Ingredients: 1 cup jowar (sorghum) flour 2 tbs suji/rava (semolina) 3 tbs khatta dahi (sour curd / butter milk optional) Approx 1/2 cup water Small crushed ginger knob Finely chopped green chillies (as per taste) Some finely chopped coriander leaves 1 tsp + 1.5 tbs oil Salt as per taste 1 tsp fruit salt (Eno) 1.5 tsp mustard seeds (rai) 1.5 tsp white sesame seeds (safed til) Pinch of asafoetida powder (hing) Some curry leaves Some red chilli powder/crushed black pepper Method: Take a mixing bowl Add 1 cup jowar (sorghum) flour Add 2 tbs suji/rava (semolina) (besan is optional to suji) Add - then check consistency & use water) Add approx 1/2 cup water gradually Stir well and bring it to ribbon consistency Rest the batter for max 15-20 min Then add a small crushed ginger knob Add finely chopped green chillies (as per taste) Add some finely chopped coriander leaves Add 1 tsp oil Add salt as per taste Keep steamer on along with water and stand in it Then add 1 tsp fruit salt (Eno) and mix it well Pour batter in a plate greased with oil Drizzle some red chilli powder/crushed black pepper Place the plate inside steamer Cover the lid with a cloth (to avoid water dripping on dhokla) Steam for 15-20 min on medium to high heat Remove the plate out of steamer once cooked Now to prepare tadka, heat up the pan Add approx 1.5 tbs oil Add 1.5 tsp mustard seeds (rai) Add 1.5 tsp white sesame seeds (safed til) Add a pinch of asafoetida powder (hing) Add some curry leaves and your tadka is ready First cut Dhokla into pieces Pour tadka on dhokla Serve with green chutney .
