How to Pimp up those Tinned Baked Beans | Masala Beans on Toast | Dishoom Cookbook Vegan Recipe

A frugal but fun take of the classic beans on toast – ideal for lazy lunch, brunch or evening meal, with a choice of your sauce or chutney as a side. Prep 10 min Cook 5 min Serves 2 For the beans 2-3 garlic cloves (peeled & chopped) ½ green chilli (chpped) 10g fresh ginger (chopped) 1 heaped tbsp tomato puree 1 tsp garam masala or choice of your spices 15g of coriander or parsley ¼ tsp seasoning (sea salt & pepper) Optional 1 x 400g tin baked beans 2x slices sourdough bread (toasted) For the garnish Coriander leaves, chopped To cook the beans, heat the juice from the beans with a little water in a frying pan. Once hot, add the garlic, ginger and green chillies, then gently stir. Add the baked beans, then heat for a few minutes, then add the tomato puree, half your coriander or parsley, spices and seasoning. Then finally cook for five minutes, until the sauce has thickened a little, then turn off the heat. Toast your sourdough bread, then rub with your garlic clove, then finally serve by spreading the beans mixture generously over the toast and garnish with coriander or alternatve herb.
