TMF&H#45: KABABAYAN BREAD | MUFFIN 'Kababayan', which translates to 'fellow countryman', is a classic Filipino muffin known for its golden brown exterior and distinct domed top shape. This 'panaderia' mainstay got its name due to its resemblance to a 'salakot' or 'sumbrero', a native straw hat Filipino farmers and townspeople wore when out and about. This is perfectly sweet, moist and soft. This all-time favourite Filipino muffin is very easy to bake and is also easy on the pocket. It's budget-savvy and yummy as practically anyone can afford it. Ingredients: 1 cup fresh milk 1 cup sugar 1 large egg 1 tsp vanilla extract 1/3 cup vegetable oil 2 cups All Purpose Flour 1 tbsp baking powder 1/4 tsp salt 2 tsp yellow food coloring 1. In a bowl sift together All Purpose Flour, baking powder and salt. 2. In another bowl which together fresh milk, sugar, egg, vanilla extract and vegetable oil. 3. Combine dry and wet ingredients together by whisking until mixture is smooth. Then add yellow food colouring. 4. Prepare a non-stick muffin pan. Brush each section with vegetable oil. Fill each section until 3/4 full. 5. Bake in 180 deg Celsius preheated oven for 5 minutes. After 5 minutes, lower the temperature to 150 deg Celsius and bake them for 18 to 20 minutes. 6. Remove from oven. After 5 minutes, remove them from muffin pans and let them cool on wire racks. Share and Enjoy!
