How To Make Authentic Mexican Fried Ice Cream How to tantalize your taste buds. Five extra minutes and you have transmogrified your vanilla ice cream. It is a perfect cap to any Mexican dish. Mexican Fried Ice Cream Balls Recipe: 1⁄2 cup butter 1 cup brown sugar 4 cups Honey Bunches of Oats 1⁄2 gallon vanilla ice cream 1 jar hot fudge sauce In a small saucepan, bring 1 cube butter and 1 cup brown sugar to boil over medium heat, stirring frequently. In a large mixing bowl, pour mixture over 4 cups of Honey Bunches of Oats and mix to coat cereal. Spread mixture to cool on sheet of aluminum foil, or parchment paper. Once cooled, break apart. Roll medium balls of ice cream in mixture, to coat. (1/2 gallon ice cream should make about 10 balls). Set on cookie sheet and freeze. Serve individual servings in a bowl and cover with hot fudge sauce. Notes: This would go great at the end of a Mexican meal, as they are very similar to “fried ice cream” you find in Mexican restaurants. So good, so easy!
