This is a simple healthy low fat gluten -free stir fry hairy gourd dish. Stir fry hairy gourd with eggs, carrots and 100% mung bean vermicelli with only garlic, red onion and salt make this healthy dish filling and yet gluten free. Hairy gourd or melon (also known as fuzzy melon) is low in calories and has ZERO fat. It is also high in vitamin C and a good source of fiber and potassium. Ingredients 700g of hairy gourd 1 small carrot 3 cloves of garlic 1 small red onion Handful estimated 10 to 15g of mung bean vermicelli (Cellophane noodles) 2 TBSP of dried shrimps 1/8 TO 1/4 TSP of Himalayan salt or any salt of your choice Little oil for frying Steps: Preparation 1. Soak the dried shrimps with 1/4 cup warm water. 2. Soak dried mung bean vermicelli with enough warm water to cover it. Cut if the strands are too long. 3. Peel and chop garlic and onion 4. Crack and beat 2 eggs. 5. Use a peeler to remove the skin of the hairy gourd. 6. Cut the carrots and hairy gourd into thin shreds Cooking 1. Add oil into the frying pan. 2. Once the oil is heated, add in the pre-soaked dried shrimps. Preserve the water used for soaking for step 5. 3. Fry till fragrant and then add garlic and onion 4. Once the garlic and onion turn slightly brown, add in the carrot. 5. Fry for about 2 to 3min, add in the water left behind from soaking of the dried shrimps. 6. Add hairy gourd when the carrot shreds have softened. 7. Add half of cup of water and cover for 3min. 8. Add in salt 9. Take a bite of a shred of the gourd. If it is soft, it is time to add in the eggs. 10. Add in the vermicelli. 11.
