Look-alike Watermelon Raisin Bagel recipe. Here's how I made my watermelon look alike bagels. I haven't made these using any other recipe but I imagine if you seperate your favorite recipe close to the way I did here it should work. I always end up adding a touch more or a touch less flour when I'm making these bagels. I think it has to do with how the dough winds up when its seperated. ( I'm not completley precise when I divide the dough ) You'll need 3 cups of BREAD flour divided: 2 cups of flour 1/2 cup of flour 1/4 cup of flour 1/4 cup of flour 1 1/4 cups of warm water divided into: 1/2 cup 3/4 cup 4 1/2 tsp sugar 2 1/4 tsp yeast 1 1/2 tsp salt 0-3/4 cup of raisins 1 tbsp of oil 1 egg red and green food coloring Some points for the video are Yeast at 44 seconds Dough #1 at 57 seconds Divide dough at 1 min12 seconds Red dough making at 1 min 28 seconds Green dough making at 2 min 24 seconds White dough making at 3min 2 seconds Forming red dough and raisins at 4 min 17 seconds Rolling and wrapping white dough at 4 min 40 seconds Rolling and wrapping green dough at 5 min 59 seconds boiling bagels at 7 min 30 seconds 1. Add your yeast and sugar to 1/2 cup of warm water in a small bowl. Let sit for 5 - 10 minutes. 2. Mix 2 cups of bread flour and salt together in a large bowl. ( I didn't show where the salt went in on the video ) oops !! 3. When the yeast mixture is ready, mix it and the remaining 3/4 cup of water in with the salt flour mixture. Mix until the flour is incorporated. The dough will be very sticky. 4. Divide the sticky dough into 3 parts. ( I go approx. 40%, 30 % and 30% ) 5. Place 1/2 cup flour on work surface and add 40% of the sticky dough and 4 drops of red food coloring. Knead in as much flour as you can. 8-10 minutes. The dough should be smooth and bounce back when you poke it with your finger. 6. Roll red dough into a ball and place in a lightly oiled bowl. Cover with saran wrap. Let rise for 1 hour or until doubled in size. 7. Place 1/4 cup of flour on work surface and add 30 % of sticky dough and 3-4 drop of green food coloring. Knead in as much flour as you can. ( add or subtract flour as needed ) approx. 8 minutes. The dough should be smooth and bounce back when you poke it with your finger. 8. Roll green dough into a ball and place in a lightly oiled bowl. Cover with saran wrap. Let rise for 1 hour or until doubled in size. 9. Place remaining 1/4 cup of flour on your work surface and add remaining 30% of sticky dough. Knead in as much flour as you can. ( add or subtract flour as needed) approx 8 minutes. The dough should be smooth and bounce back when you poke it with your finger. 10. Roll white dough into a ball and place in a lightly oiled bowl. Cover with saran wrap. Let rise for 1 hour or until doubled in size. 11. Punch down all 3 doughs. 12. Preheat oven to 350 * F. Bring a pot of water to a gentle boil on stove top. 13. Seperate red dough into 8 pieces and form each piece into a ball. Place under saran wrap. 14. Seperate white dough into 8 pieces. 15. Roll one piece of white dough until its round in shape and thin. Dab white dough with wet fingers to help it stick to the red dough. Place a red dough ball in the center of the white dough. Wrap the white dough around the red ball, pinching the seams tightly together. 16. Repeat step 15 until all red dough balls are wrapped in white dough. 17. Seperate green dough into 8 pieces. 18. Roll one piece of green dough until its round in shape and thin. Dab green dough with wet fingers to help the green dough stick to the white dough. Place a white dough ball in the center of the green dough. Wrap the green dough around the white ball pinching the seams tightly together. Some of the dough may be starting to rise at this point. If you start getting air bubbles poke them with a toothpick. 19. Repeat step 18 until all white dough balls are wrapped in green. 20. Place green dough balls into boiling water. ( 2 or 3 at a time ) Boil for one minute. Turn over and boil for an additional minute. Remove boiled dough balls to cooling racks as they come out of the water. 21. Make an egg wash with 1 egg and a few drops of green food coloring. 22. Use egg wash to make stripes on the boiled bagels. 23. Bake for 18-20 minutes at 350 * F. 24. Remove from baking tray onto cooling racks. 25. Enjoy !!! I make wonky baked goods for fun. Please if you notice anything that is incorrect or maybe an easier way let me know.
