Butter Paneer Masala Recipe | Restaurant Style Paneer Butter Masala Butter Paneer Masala Recipe (Without Turmeric) This is a restaurant-style, rich and creamy butter paneer masala recipe that does not use turmeric. The use of cashews and condensed milk gives its gravy a unique sweetness and thickness. 🔪 Method For the gravy base: • Onions: 2 large (roughly chopped) • Tomatoes: 2 medium (roughly chopped) • Green chilies: 2 • Garlic: 7-8 cloves • Cashews: 10-12 • Oil: for frying Main ingredients and spices: • Paneer: 200-250 grams (cut into pieces) • Butter: 3-4 tablespoons • Cumin seeds: 1 teaspoon • Mace: 1 small piece, 4 cloves and two green cardamom pods • Garam masala: 1 teaspoon • Coriander powder: 1 teaspoon • Salt: to taste • Cream: 1 small bowl (or 2-3 tablespoons) • Condensed milk (homemade): 1 small bowl (or 2-3 tablespoons) For garnish: • Kasuri methi (dried fenugreek leaves): 1 teaspoon • Fresh coriander: finely chopped 1. Preparing the gravy base 1. Heat some oil in a pan. 2. Add onions, tomatoes, green chilies, garlic cloves, and cashews and fry well. 3. Sauté them until the onions and tomatoes are slightly softened. 4. Let the mixture cool completely. 5. Once cooled, blend it in a mixer grinder to make a very fine paste. 2. Sautéing the spices and making the curry 1. Heat a generous amount of butter in a wok or pan. 2. Add cumin seeds and mace to the hot butter and let them splutter. 3. Now add the prepared fine paste (gravy) and fry well on low heat. 4. Cook the gravy until it starts releasing oil/butter and its color deepens. 5. Add coriander powder, garam masala, and salt to taste. 6. After frying the spices for 1 minute, add cream and condensed milk (or milk/water) to adjust the consistency to your liking. 3. Paneer and Finishing 1. Once the gravy comes to a boil, add the paneer pieces and mix. 2. Let it cook on low heat for 5 minutes so that the paneer absorbs the spices well. 3. Finally, crush the fenugreek leaves (kasuri methi) with your hands and add them, along with finely chopped fresh coriander. 4.
