They asked the proprietors, Richard and Nancy Inouye, to put a hamburger patty over rice, topped with brown gravy to keep it moist, and a fried egg. They named it "Loco Moco." The "loco" part came from one of the teenagers’ nicknames, "Crazy," and "moco" (which amusingly means 'mucus' in Spanish) was added simply because it rhymed, with no particular meaning in mind. Loco Moco has since evolved and can now be found in various forms throughout Hawaii and beyond, sometimes using different types of meat like Spam, chicken, or pork. Chefs and restaurants have also put gourmet spins on the dish, utilizing higher quality cuts of beef, adding additional toppings like onions, mushrooms, and bell peppers, or crafting unique types of gravy.
