quick and easy Instant Khandvi Bites 🌼 Instant Khandvi Bites – Soft, Tangy, and Tempting! 🕒 Prep & Cook Time: 25 minutes total 🍽️ Serves: 4 people --- 🧾 Ingredients: For the batter: 1 cup gram flour (besan) 1 cup sour buttermilk (or ½ cup curd + ½ cup water) 1 cup water ½ tsp turmeric powder ½ tsp ginger-green chili paste Salt to taste 1 tbsp oil For tempering: 1 tbsp oil ½ tsp mustard seeds 1 tsp sesame seeds A pinch of asafoetida (hing) 8–10 curry leaves For garnish: Fresh coriander leaves, finely chopped Grated coconut (optional) --- 👩🍳 Instructions: 1. Prepare the batter: In a non-stick pan or heavy-bottomed kadai, whisk together besan, buttermilk, water, turmeric, salt, and ginger-chili paste until smooth (no lumps). 2. Cook the batter: Cook on medium flame, stirring continuously until it thickens (about 7–10 minutes). It’s ready when a small portion spread on a plate sets firm and peels easily. 3. Spread and roll: Quickly spread the cooked mixture thinly over a greased plate or clean countertop using a spatula. Let it cool for 2–3 minutes, then cut into long strips and roll them tightly into small bite-sized pieces. 4. Prepare tempering: Heat oil, add mustard seeds. Once they crackle, add sesame seeds, hing, and curry leaves. Pour this tempering evenly over the rolled khandvi bites. 5.
