I think I’ve finally perfected my vegan macaron recipe!! Excited to share it with you all 💕 The star of this recipe is aquafaba. Otherwise known as the juice from the can of chick peas. This ingredient can be whipped and used in place of egg whites. Serious vegan magic! So to get started, we’re going to reduce a cans with of aquafaba to about half- then cool it down in the fridge fir a couple hours. Or in the freezer for 15 minutes. Whole our aquafaba cools, we’re going to sift together a cup of powdered sugar and a cup of super fine almond flour/meal Once your aquafaba is cooked. Whip it on higher speed with a hand or stand mixer. Once foamy, add 1/2 tablespoon cream of tarter- this is going to stabilize our mixture. After mixing for another minute or so - slowly add 1/2 cup white sugar and keep blending (scraping down sides once or twice) until stiff glossy peaks form. Fold your dry ingredients into whipped aquafaba in 3 stages. Then add 1/2 teaspoon of almond extract and any food coloring you would like. (Optional:) Fold until batter falls off of your spatula in ribbons Pipe onto parchment. Tap on counter to release air bubbles. And either smooth out any peaks with wet fingers. Or smoosh down with sprinkles! Let macarons dry on counter for one hour. You want them to form a skin so our distinct macaron foot can form Once dried- bake at 250 Fahrenheit for 35 minutes. Turn off oven and don’t open!!!!!!!!!!!! Let macarons cool completely in the warm oven Once cooled, I filled them with a simple butter cream using 1/4 cup vegan butter at room temp, mixed with 1/2 cup powdered sugar, and 1/8 teaspoon vanilla extract. You can also use jam, peanut butter, cream cheese icing, the sky is the limit!! vegan note sone powdered and white sugars use bone char to filter in production. As far as I understand using organic / all natural brands keeps you away from this. I’ll link some brands below. & some red coloring may contain beetles!
