Cooking the beans: ½ an onion, cut in half ½ green pepper cut in half 4 garlic cloves 1 recao leaf 1 ham hock 1 tbsp of salt 1 tsp of black pepper 1 tsp of cumin 2 bay leaves 1- Place all the ingredients in a crock pot, pressure cook on high for 45 minutes. 2- Beans should be soft and ready for you to make a soup or anything else. Treat these beans like they have come out of a can. 3- Drain beans and reserve liquid. Black bean broth. For Congri: Ingredients- 4 tbsp of olive oil ½ an onion diced small ½ pepper diced small 4 chopped garlic cloves ½ cup of smoked ham Meat from the ham hock (from softening the beans in crock pot) 2 tsp of cumin 2 tsp of granulated garlic 1 tsp of oregano 1 tbsp of salt 1 tsp of pepper 1 lb of black beans 4 cups of liquid used for the beans 2 slices of bacon 3 cups of white rice Instructions: 1- Add diced bacon, smoked ham, onion, pepper and garlic to caldero with 4 tbsp of olive oil. Saute. 2- Add seasonings and spices. 3- Add 4 ½ cups of black bean broth and black beans (if you need to add water to make the 4 ½ cups, go right ahead). 4- Stir until everything is well incorporated. 5- Add the 3 cups of rice and vinegar, stir until everything is incorporated. Put it at medium low until all the liquid has evaporated. 6- Once all the water has evaporated, stir, cover and put it on low heat for 20 minutes until fully cooked.
