KETO JAPANESE BERRY SHORTCAKE | 生酮日式漿果奶油蛋糕 | This week I'm sharing with you an easy Japanese shortcake recipe. Soft fluffy cake layers with whipped cream and berries of your choice, perfect cake to share with the family and friends and what makes it even better is you can have extra pieces without guilt. Wish every family a Happy Mother's Day! Ingredients: 4 medium to large size egg (separate yolk and white) 65g Blanched almond flour 65g Cream 1tbsp Avocado oil 1 tsp Vanilla extract 35g Powdered Erythritol (or other powdered sweetener of your choice) 1tsp Lemon juice Cream filling (whip to hard stiff) 300g heavy cream 1/3 cup Powdered Erythritol TIPS: The cake tastes even better if you can keep it in the fridge for couple of hours before serve. Sweetener in this cake is low sweet taste, you can increase the erythritol amount slightly if you prefer sweeter version.
