In this lecture, Professor Zach Murphy discusses the process of deglutition, or swallowing, integrating the anatomy and physiology involved in moving food from the oral cavity to the stomach. We begin by discussing the oral preparatory phase, where mastication and saliva secretion create a bolus suitable for swallowing. This is followed by the oral phase, in which the tongue propels the bolus toward the oropharynx under voluntary control. The lecture then covers the pharyngeal phase, a reflexive stage mediated by cranial nerves IX and X, where the soft palate elevates to close off the nasopharynx, the epiglottis folds over the laryngeal inlet, and the upper esophageal sphincter relaxes to allow passage of the bolus. Finally, we explain the esophageal phase, driven by peristaltic contractions and controlled by the enteric nervous system, ensuring the bolus moves efficiently into the stomach through the lower esophageal sphincter.
