Make this for the holidays and you won’t regret it. Quick to make, and perfect for any occasion. Read below for a secret on how to make your bananas last longer and not brown. Ingredients: 6 large eggs 1 Cup granulated sugar 1 teaspoon vanilla extract 1 Cup all-purpose flour 1 teaspoon baking powder 2 ripe bananas (mashed) 1/2 Cups pecans (chopped) Cream: 1 Cup butter unsalted (2 sticks, at room temperature) 14 oz can sweetened condensed milk 8 oz package cream cheese (at room temperature) 3/4 Cup VERY cold whipping cream 1 1/2 Tablespoons powdered sugar Additional: Tea towel to roll the cake 1 large sliced bananas ( for garnish) 1 Tablespoon fresh lemon juice To begin, preheat oven to 350F. Line a half-sheet pan with parchment paper, cut the sides that the paper only covers the bottom. Chop pecans and set aside. Now prepare the cake. Place eggs and sugar into a stand mixer bowl and whisk on high speed for 7-9 minutes. When eggs are thick, pale in color and voluminous add vanilla extract and whisk additional 30 seconds. In a separate bowl, sift flour and baking powder. Mash the bananas in a bowl. In small portions add dry ingredients to egg mixture. Fold gently but thoroughly after each addition. Mix in mashed bananas with chopped pecans, then pour the batter into the pan. Spread the cake evenly to the edges, then bake in preheated oven for 18-20 minutes. Sprinkle a light dusting of powdered sugar over a clean tea towel and top of the cake. Run a knife along the edges to loosen the cake from the pan. Using kitchen mittens, invert the cake to the towel. Gently pull away the parchment paper. With the tea towel, roll the cake into a roll and allow to cool completely on a wire rack. While the cake is cooling, let’s prepare the cream. Whisk butter and condensed milk for 7 minutes on high speed. Mix in softened cream cheese. It is IMPORTANT that the cream cheese is really soft, or you will get small chunks in your cream. In a separate bowl, beat very cold whipping cream and powdered sugar, add it to the cream. Mix all in from bottom up, so no white streaks will show. For garnish, peel and slice a banana, squeeze fresh lemon juice. Once cake is cooled and cream is ready time to assemble. Gently unroll the sponge cake. Spread two-thirds of the cream. Making sure to cover the inside of the folds. Here is the KEY point. Before spreading bananas over the cake, wash them in lemon juice. This will prevent them from browning. Spread the bananas over the cake. Gently roll the cake back up the same way it cooled and transfer onto a serving tray. Use the remaining cream to frost the top and sides of the cake. Garnish the cake with more sliced bananas. DON’T forget to wash with lemon juice.
