Bring to boil over high heat. Once water is boiling reduce heat to medium, then cover pot. While boiling lentils combine both oils in frying pan and heat over medium to high heat, then add onions and stir until golden brown and crispy. Careful not to burn them -takes about 15 min transfer onions to paper towel and reserve the oil When lentils are done (approx 20 minutes to be done), strain them, and reserve the cooking liquid from the lentils for later . If the cooking liquid is less than 2 1/2 cups, add water to it to bring to desired volume. Heat only 1.4 cup of oil used to fry onion (use high heat), add the rice and stir carefully not to break the grains until all grains are coated with oil. Add the lentils. Mix it all together Add tumeric, add cumin , add pepper, and salt. Mix all together Add the water used to cook the lentils. Reduce heat to medium cover pot, and cook for 30 min, till water boils down. Combine 1 1/2 cups of greek yogurt, 1 minced clove of garlic, and 1/2 tsp of dried mint into a separate bowl. whisk to thin the mixture Add 3 small cucumbers (cut as desired) Cut as desired. Mix all together Cover with plastic and keep in fridge until ready to serve When rice is done Fluff the rice and lentil grains with a large fork. Serve in plate, garnish with fried onions Serve with the salad on the side. Bon apetite.
