Hunt, Gather, Cook: CHINESE WATER DEER (possibly the best to eat!)

Over the past two decades, I’ve shot and cooked five of the six UK deer species: red, roe, fallow, sika and muntjac. The species missing from that list is the lesser-known Chinese Water Deer, so I’m in Norfolk for the final episode of Game Eater to see if I can get after one (or two) and complete the feat. I’m heading to the marshlands on Raveningham Estate to stalk with Conservation Manager Adam Gage, before skinning and butchering the meat for an ‘assiette de Chinese Water Deer’ with fancy French mash and mushrooms in a venison sauce.
