We caught fresh tailor off the rocks below Cape Byron, then fired up the Matty Matheson x Gozney Signature Tread Oven for a beachside fish pizza feast — crisp dough topped with tailor fillet, artichoke, Calabrian chilli, capers, coastal greens, and tarragon. To start: a yellowfin bream crudo with citrus and herbs, served ice-cold right by the ocean.
