Kare-kare is one of my favorite dishes ever! This dish is paired with shrimp paste/bagoong to give the distinctive taste. This version of Kare-kare is not the traditional type. I didn't use oxtail, tripe, or beef but instead, I used pork leg or pata ng baboy as we call it in tagalog. I also used the broth from the pork leg that I used to make the Kare-kare sauce. This will be a great dish to add-in the lists for Noche Buena and New Year's Eve! Ingredients 1 kilo pork leg or pork pata 1 large onion, chopped 6 cloves garlic, minced 1 piece pork broth cube 4 tablespoon peanut butter 1 pack mama sita's kare-kare mix 1/4 cup brown sugar 5 pcs sachet crushed peanuts fish sauce to taste 3-4 tablespoon cornstarch dissolved in 1/4 cup water 3 bundle petchay 1 bundle string beans 3 pieces large eggplant annatto oil, to make the annatto oil combine annatto seeds and hot oil and let it sit for 5 minutes. This dish serves 8-10 persons Note: You can use rice flour as thickener You can use oxtail, beef tripe, beef chunks, beef shank, pork belly, and seafood ( mussel, shrimp/prawn, squid ) NOTE: COOKING IS ALL ABOUT YOUR TASTE.
