CILANTRO LIME RICE: So Delicious and So Easy to Make it's the Perfect Side Dish for any Meal

If you've never made Cilantro Lime Rice before, I think you're going to be surprised by how easy it is to make, and it's so delicious. It's the perfect side dish that goes great with any meal. Just picture light, fluffy rice infused with cilantro flavor and with a bright, tangy zip from fresh lime. Read on for the recipe. Cilantro Lime Rice 1 cup long grain Jasmine or Basmati rice (rinsed and dried) 2 cups chicken or vegetable broth 1/3 small white or yellow onion, chopped 2 cloves of garlic, minced the juice and zest of 1 lime salt to taste (approx. 1 tsp.) 1/4 to 1/2 cup of freshly chopped cilantro (to your liking) Heat a large skillet on the stovetop over medium high heat and drizzle in enough oil to coat the bottom of the pan. Add in rice and chopped onion and stir until onion softens. Add in minced garlic, lime zest, and salt. Stir. Then add chicken broth. Mix once more, then remove spoon and let it come to a boil. Once it reaches a boil, cover with a lid and set burner to Low. Let cook for 15 minutes without lifting the lid or stirring. After the 15 minutes, remove from stovetop and let sit with cover still on another 15 minutes. Then remove lid and fluff with fork. Add in chopped cilantro and squeeze in fresh lime juice. Fluff again, transfer to serving dish, and enjoy. Thanks so much for checking out this video.
