Thermoworks thermapen: https://amzn.to/2rMBYA5 (affiliate link) Price Breakdown: 4 cups king arthur bread flour: $4.95 for a 5 pound bag (19 cups) = $1.04 2 tbs good olive oil: $22 for 33.8 oz = 64 cents 2.25 tsp yeast (1/16 of a 4 oz jar b/c it equals 16 packets and there's 2.25 tsp in a packet): $6.39/16 = $0.40 2 tsp salt: 1 cent 1 pound bacon: $5.99 2 sticks pepperoni: $2.99 CHEESE (both pizzas): 1/2 mozzy cheese: (total block was $7.99) = $4 1/2 fontina cheese: (total block was $7.49)= $3.74 2/5 parm (total block was $8.99) = $3.60 2 tbs butter: 19 cents TOTAL FOR 2 PIZZAS WITHOUT SAUCE: $22.60 Recipe: The dough: 2 1/4 tsp dry active yeast 1 1/3 cups warm water (between 105 and 115 degrees F) Let the yeast and water stand for 5 minutes. If your yeast looks a bit foamy, proceed. If your yeast has not reacted, discard and buy some new yeast and start over again. Add: 2 cups white bread flour Stir until the mixture is like cake batter. Then add: 2 tsp salt 2 tbs olive oil Stir until incorporated, then add: 1 1/2-2 cups white bread flour Add the flour 1/4 cup at a time, turning out onto a big wooden cutting board (or clean countertop) and mixing by hand once the mixture gets too dry to mix with a spoon. Continue to add flour little by little until the dough is sticky, but releases from the work surface and your hands. Knead for 10 minutes until the dough is smooth and your hands are clean of dough bits. Put dough in an oiled bowl, cover, and let rise in a warm place for an hour and a half (an hour into this process, I like to preheat the oven as hot as it will go, with a pizza stone inside since the stone needs 45 minutes to come to temp.) The sauce: 1 tbs olive oil 4 large cloves garlic Sautee in a large rimmed skillet on low until the garlic is fragrant, then add: 2 tbs tomato paste Sautee until the paste starts to brown, then add: 1 30 oz can of crushed tomatoes 1 tbs Italian seasoning 1 tsp red pepper flakes (salt to taste after the sauce has cooked) Simmer gently on low, stirring occasionally, for about half an hour or until the sauce is very thick and dry. Puree in a food processor and set aside. After the dough has risen for an hour and a half, punch it down, knead briefly, then separate into two balls. Put one ball into the fridge for later use. Cover the remaining ball with a towel on a lightly floured cutting board and let rest for 15 minutes. For toppings and assembly, refer to the video. Bake on a preheated pizza stone in a very hot oven (as hot as your oven will go.) If you're like me and have a standard oven that only goes to 500 degrees, cook the pizza for 7 minutes, then start checking it for doneness. SAUCE: (I only used half) Tomatoes: $1.05 *Half a small can of tomato paste: $0.23 (I forgot to include this in the video) *1/3 of a head of garlic: $0.17 (I forgot to include this in the video) 1 tbs olive oil for sauce: 33 cents 1 tbs Italian seasoning: 3 cents 1 tsp red pepper: 1 cent TOTAL SAUCE: $1.82 TOTAL 2 PIZZAS WITH EVERYTHING: $23.50
