Recipe: 2 cups unsweetened flaked, coconut 4 cups boiling water Directions: Add coconut flakes to blender and pour boiling water over the coconut. Allow coconut to steep in water for about 5 minutes. Blend for exactly 1 minute. Strain using a nut bag. Allow to cool, and wring out bag of coconut until it is as dry as possible. Chill or use immediately. Please note that the fat will harden on top of the coconut milk. Re-heat and mix if you'd like a coconut milk that is more of a canned coconut milk consistency. Or, remove coconut cream from the top of the refrigerated coconut milk, let soften on counter slightly and use in place of whipped cream.
