A lovely day spent with my Mum, sister, and niece in Swansea, browsing for fabric. My Mum, who enjoys sewing, plans to make a pair of trousers for me. As we wandered through the city, we unexpectedly found ourselves amidst a military parade—fitting for St. Patrick’s Day. Back home, I baked a delicious walnut loaf, which we savored on Sunday morning before setting off for Barafundle Bay. Nestled along the Pembrokeshire coast, this stunning, secluded beach is often compared to the shores of the Caribbean, with its golden sands and turquoise waters. A perfect escape into nature’s beauty. -------------------------------------------------- Old-Fashioned Walnut Bread Ingredients: 375g all-purpose flour 7g active dry yeast (1 packet) 240ml warm water (about 45°C) 30g honey or brown sugar 5g salt (about 1 tsp) 30g butter, melted 120g chopped walnuts ½ tsp cinnamon (optional) Instructions: Activate the Yeast: In a small bowl, dissolve the yeast in warm water with the honey (or sugar). Let it sit for 5–10 minutes until foamy. Mix the Dough: In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and melted butter. Stir until the dough begins to come together. Knead the Dough: Turn the dough onto a floured surface and knead for about 8–10 minutes until smooth and elastic. Gradually knead in the chopped walnuts. First Rise: Place the dough in a lightly greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size. Shape and Second Rise: Punch down the dough and shape it into a loaf. Place it in a greased loaf pan or shape it into a round loaf and place it on a baking sheet. Cover and let it rise for another 30–40 minutes. Bake: Preheat your oven to 190°C. Bake for 30–35 minutes until golden brown and the loaf sounds hollow when tapped.
