Today I’m sharing with you my Mixed Berry Muffins which are the perfect after school snack! My kids and I both appreciate a warm, home baked treat, and these fluffy, moist, berry-filled muffins fit the bill! Jenn’s Channel: / @whenwithjenn Mixed Berry Muffins (makes 12) 2 cups all purpose flour ½ tsp. baking soda ½ tsp. salt ½ tsp. cinnamon 2 eggs ½ c. white sugar ½ c. brown sugar 1 stick unsalted butter, melted and cooled slightly ½ tsp. vanilla extract 1 c. sour cream 1 c. frozen mixed berries, thawed cinnamon sugar (optional) Preheat oven to 400*. Grease a muffin tin with baking spray or fill with paper liners. In a medium mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. In a large mixing bowl, beat the 2 eggs. Whisk in the white sugar, brown sugar, butter, and vanilla. Add ½ of the flour mixture to the wet ingredients. Stir with a rubber spatula until just incorporated. Add 1 c. sour cream. Stir again. Add the other ½ of the flour mixture and stir until just combined. Lastly, add the mixed berries and stir to distribute them throughout the batter. Using an ice cream scoop, portion the batter into the prepared muffin tin. Sprinkle the tops with cinnamon sugar, if desired. Bake at 400* for about 20 minutes. Allow to cool slightly before serving.
