Hi everyone. In this video it was a Sunday morning and the family fancied a roast chicken and the trimmings so I thought I would try it out in the dutch oven on the fire. Never done it before and to be honest it was amazing for a first attempt. First I boiled the onions, garlic and herbs, strained and mixed with mince and breadcrumbs to make the stuffing. I kept the onion stock for the gravy later. Stuffing went between the skin and the breast and into the dutch oven. I lined the bottom with onions and carrots so the chicken didnt burn and also to help flavour the gravy at the end. I cooked green beans in the onion stock and again saved it after for the gravy. Same with the potatoes for the mash. I put the potatoes through a ricer and added butter at the end. The beans I fried with anchovies and garlic for a really nice flavour. All the stock went back into the dutch oven and reduced for a while to get the gravy nice and dark and intense. The rest was history. Really, really tasty, family loved it. Thanks for watching.!
