In a large bowl, whisk dry ingredients together. 2. Using the whisk, make a well in the center of the bowl. 3. Pour buttermilk, eggs, and melted butter into the well. 4. Starting from the center, whisk all ingredients together. Do not overmix. Batter should be lumpy. 5. Lightly grease a nonstick pan or griddle. Turn heat to low for a few minutes. 6. When the pan/griddle is hot, pour 1/3 cup batter at a time onto the pan or griddle. Make sure the pancakes do not touch. 7. After the bubbles rise to the surface and pop, the pancake should be ready to flip (you can check the bottom of the pancake while cooking to see if it is golden). Adjust heat as necessary. Notes • If you're not going to use all of the batter, you can store the rest of it in the refrigerator in an airtight container for up to two days. Lay a piece of plastic wrap on top of the batter so air doesn't get to it. If the batter is exposed to oxygen, it will turn slightly gray but still can be eaten. • If you don't have buttermilk, you can use 1 tablespoon of fresh lemon juice (or light vinegar, such as white, white wine, or champagne) to a measuring cup and add enough milk to reach 1 cup. Or, thin one part yogurt, sour cream, or other creamy dairy product with one part milk, or thin two parts yogurt or other creamy dairy product with one part water.
