Banana Pudding with Meringue topping Ingredients for pudding: 1 box of vanilla wafers 4-5 bananas 1 cup of sugar 1/2 cup of all-purpose flour 1/4 tsp of salt 4 large eggs 3 cups of whole milk 2 tbsp of vanilla extract 2 tbsp of melted butter Ingredients for the meringue topping: 3 egg whites 3/4 cup of granulated sugar Instructions: In an oven safe dish, layer the wafers and sliced bananas. Set aside. In a pot, add sugar, flour, and salt. Stir dry ingredients until combined. Add milk and stir until well blended. Now turn on medium low heat, add eggs. Whisk until the mixture is smooth. keep the mixture stirred throughout the whole cooking process. Cook time is 10-12 minutes. Pudding containing eggs should reach 160°F. Stir continuously to keep the pudding from scorching. The pudding will begin to thicken. Once the pudding has thickened, remove from heat. Add 1 cup of milk, and then stir vigorously. Add vanilla extract and melted butter. Stir until completely incorporated. Pour the pudding over the layered wafers and bananas. Refrigerate while making the topping. Topping Instructions: Separate 3 egg whites then add to the mixer bowl. Mix on medium speed for 2-3 minutes. Turn the mixer up to high speed and beat till stiff peaks form. Add 3/4 cup of granulated sugar, then beat for an additional 2-3 minutes. Spread the meringue on top of the pudding. Broil in the oven 3-5 minutes or until light brown. Only broil in an oven safe dish! Chill for 1 hour before serving. We all ate our grandmother's meringue as a child. We fought to lick the bowl. I still eat it to this day and so does my family but for safety purposes below is a disclaimer for that.
