BHARELA RAVAIYA NU SHAAK CHEF AANAL KOTAK INGREDIENTS FOR STUFFING MASALA: • ½ cup roasted peanuts • 3 tbsp sesame seeds • 10 to 15 cloves of garlic • 1 tbsp sugar • 1 lemon Juice • 3 green chilies, chopped • ½ tsp garam masala • ¼ cup coriander leaves INGREDIENTS FOR TADKA (TEMPERING): • 2 tbsp oil • 1 tsp mustard seeds • 1 tsp cumin seeds • 1 tsp Green chili paste • 1 tsp garlic paste • 1 cup tomato puree • Salt to taste • ½ tsp turmeric powder • 1 tsp red chili powder • 1 tsp coriander powder • 1 tsp cumin powder • Leftover stuffing masala • Stuffed brinjal (eggplants) and potatoes • Fresh coriander leaves • 1 tsp jaggery METHOD: PREPARE THE STUFFING MASALA: • Coarsely grind the roasted peanuts, sesame seeds, garlic cloves, sugar, lemon juice, salt, garam masala, and coriander leaves together. • Stuff the prepared masala into baby brinjals and potatoes. Set them aside. • Steam the stuffed brinjals and potatoes for 12-15 minutes. PREPARE THE TADKA (TEMPERING): • Heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida. Allow them to crackle. • Add the green chili paste and garlic paste, and sauté for a minute. • Add the tomato puree, salt, turmeric powder, red chili powder, coriander-cumin powder, and leftover stuffing masala. Mix well and cook until the oil separates from the masala. • Add the steamed stuffed brinjals and potatoes to the pan. Mix gently to coat them with the masala. • Add fresh coriander leaves and jaggery. Cook for another 10-15 minutes until the vegetables are well cooked and the Flavors are absorbed.
