We begin by discussing the sources and forms of dietary carbohydrates, including polysaccharides such as starch, disaccharides like lactose and sucrose, and monosaccharides such as glucose, fructose, and galactose. The lecture then covers the key enzymatic processes involved in carbohydrate digestion, beginning with salivary amylase in the mouth, continuing with pancreatic amylase in the small intestine, and concluding with brush border disaccharidases that break down oligosaccharides into absorbable monosaccharides. We then explore the mechanisms of carbohydrate absorption within the small intestine. Glucose and galactose are transported across the apical membrane via sodium-glucose linked transporters (SGLT1), while fructose enters through facilitated diffusion via GLUT5. All monosaccharides exit enterocytes into the bloodstream through GLUT2 transporters on the basolateral membrane. The lecture also highlights the importance of sodium gradients, maintained by Na+/K+ ATPase pumps, in powering active transport.
