In this brand new series, food meets video games in a way never shown before. Episode one begins with the mighty demigod Kratos! Comment below and tell us who you'd like to see featured. Recipe: 1. Pat dry 2 large beef or veil shanks and tie a butchers knot around each. Season. Dust with flour, shaking off excess before dropping them into a mix of grape seed oil and olive oil (butter optional). Brown on all sides, remove from pan and wipe pan clean with paper towels. Do not rinse. 2. Wash vegetables: 2 carrots, 2 leaks, 1 shallot, 4-5 stalks of celery. Dice. Add to dutch oven along with olive oil and butter. Season. Cook on medium-high until colored. Peal 3-4 cloves of garlic and add. Brown. Deglaze with 2 cups of red wine. Reduce. Add 4 cups beef stock or demi-glace and bring to a boil. Add shanks back in, cover, and cook at 300 degrees for 3-4 hours. 3. Bring 4 cups water to boil and add 1 cup cornmeal slowly while stirring. Reduce heat to low. Cook for 20-30 minutes, stirring every few minutes. If pan gets too dry, add in a ladle of water or stock. Remove from heat. Add 2T butter, salt, pepper, and parm to taste. Cream optional if you're french. Mixture should be slightly runny. 4. Combine equal parts lemon zest, orange zest, parsley and fresh horseradish in small bowl. Set aside. 5. After shanks have cooked for 3-4 hours, retrieve pan. Remove shanks. Blend sauce. Strain sauce. Bring back to a boil. Reduce until thick. 6. Plate. Enjoy.
