Phú Quốc is a Vietnamese island off the coast of Cambodia in the Gulf of Thailand. It's known for white-sandy beaches and resorts, most of which are along the palm-lined southwest coast. More than half of the island is part of Phú Quốc National Park, which features mountains, dense tropical jungle, hiking trails and wildlife. Duong Dong is the largest town, with day and night markets selling crafts, produce and fish. This episode takes us from Belfast to London and finally on to the sleepy island of Phú Quốc where I explore the coastline, get my baring's in town and try one of the most iconic local dishes the island has produced whilst talking to the locals in the marina district. The Dish : Goi Ca Trich is one of Phu Quoc's most iconic dishes, loved for its freshness and distinctive coastal flavour. The herring fillets are lightly marinated with lime juice or vinegar to reduce the fishy taste while keeping the meat firm. They are then mixed with onions, herbs, and shredded coconut, paired with rice paper, fresh basil, cucumber and iceberg lettuce. You must try this dish!
