When heavy rain hits your cottage, slow cooking with fire can be a great way to embrace the weather, creating a cozy atmosphere. These are some of my favorite moments in the countryside. Today I'm cooking Osso Buco. This Italian recipe features beef or veal shanks that are slowly simmered in a deliciously rich gravy until the meat becomes fork tender and practically melts in your mouth. The preparation is relatively quick and easy and then it’s just a matter of waiting for it to cook. And the wait is more than worth it! Ingredients • 2 ½-3 pounds beef shanks, about 4 pieces total • 3 tablespoons extra-virgin olive oil •1 teaspoon kosher salt • Freshly cracked black pepper, to taste • 2 celery ribs, finely diced • 2 medium carrots, finely diced • 1 medium yellow onion, finely diced • 4 garlic cloves, minced • 2 tablespoons tomato paste • 2 sprigs fresh thyme • 2 sprigs fresh rosemary • 2 bay leaves • 1 (750 ml) bottle dry res wine • 1 cup beef stock • 2 tablespoons salted butter 🍞 Considering that I kept the fire on the stove for a few hours, I also made flatbread.
