Here's the recipe for Undhiyu: First lets make the Methi Muthiya - -4 cups of chopped Methi -1/2 cup of Besan -1/4 cup of wheat flour -1 tbsp green chilli paste -salt -1tsp turmeric powder -1tbsp sugar -water -oil for frying Next Step - 500 gms kandh/purple yam 4-5 medium sized potatoes 500 gms sweet potato 7-8 small brinjal Take 500 gms kandh / purple yam and cut it into block size Make sure you put it in water while chopping to make sure you doesn't get itchi and keep it aside. Repeat the same with potato and sweet potato. Make sure both the potatoes are cut in different shape, so it is easy to identify. Masala - 6 cups finely chopped coriander 2 cups grated coconut Salt 2 tbsp soda 1tbsp turmeric powder 1 cup coriander powder 1tbsp green chilli paste 1/4 cup vegetable oil 3 cups Surti Papdi Mix it together. Once its mixed well, divide this masala in three parts. One for the Papdi and tht other two to be used as fillings for the vegetables. Follow the mixing and cooking process in the video.
