🥕🌽 Vegetable Rice Recipe By Cooking with Asifa Prep Time: 15 mins Cook Time: 25 mins Total Time: 40 mins Servings: 4–5 🧂 Ingredients: Basmati rice – 2 cups (washed & soaked for 30 mins) Carrots – 1 medium (finely chopped) Capsicum – 1 medium (sliced) Green peas – ½ cup (boiled or frozen) Cabbage – 1 cup (shredded) Green beans – ½ cup (chopped) Onion – 1 medium (thinly sliced) Garlic – 1 tsp (minced) Green chilies – 2 (slit or chopped) Soy sauce – 1 tbsp Vinegar – 1 tsp Salt – to taste Black pepper – ½ tsp Oil – 3 tbsp Water – 4 cups Fresh coriander – for garnish (optional) 🔥 Instructions: In a pot, heat oil and sauté sliced onions until soft and light golden. Add minced garlic and green chilies. Fry for a few seconds until fragrant. Add all chopped vegetables (carrot, beans, peas, capsicum, cabbage) and stir-fry for 3–4 minutes. Add soy sauce, vinegar, salt, and black pepper. Mix well. Add soaked and drained rice to the vegetables. Stir gently to combine. Pour in 4 cups of water. Bring to a boil on high heat. Once boiling, cover with a tight lid and cook on low flame for 15–20 minutes or until the rice is tender and water is fully absorbed. Let it rest for 5 minutes, then fluff the rice with a fork.
