Jerusalem artichokes (also called sunchokes) are excellent for their resilience and health benefits. Jerusalem artichokes (sunchokes) could indeed be a valuable crop in times of famine. Sunchokes are high in iron, potassium, and thiamin. Jerusalem artichokes are very low glycemic (good for blood sugar control). Perennial Growth: Once planted, they can regrow year after year from tubers left in the ground, reducing the need for annual reseeding. Nutrient-Rich: The tubers are rich in inulin (a carbohydrate), fiber, iron, and potassium—nutritionally useful during food scarcity. Storage & Flexibility: Tubers can be left in the ground for storage and harvested as needed, minimizing spoilage risk when conventional storage isn’t available.
