Delightful or disgusting? Eating snails is not for everyone. In France they are called escargot and especially served during festive meals. French chefs often cook them with garlic, parsley and butter. High class restaurants also have more elaborate versions on the menu. While the collection of wild snails is strictly regulated in France, most of the roughly 20,000 tonnes of the snails for the yearly consumption are imported. We visited a specialized farm in the French region of Burgundy to see how snails are bred and turned into the popular dish.
