This is a period of time where people start experimenting with desserts because it is too much of a hassle (and risk) to buy it from a crowded food court... The amount of dessert recipes appearing on my feed has increased! ;p Ingredients 500g mung beans (or labelled moong dhal) A bunch of pandan leaves 80g sweet potato starch 150g sugar (adjust to taste) 2 litres of water As many fried youtiaos as you want (cut into small pieces) Soak mung beans in water for 2 hours, rinse and drain the water. Lay some cut pandan leaves on a plate and transfer drained mung beans onto plate. I was greedy and I cooked too much! You should spread the beans evenly. Steam mung beans for 10 mins. Whilst steaming, prepare 80g sweet potato starch with 150ml water. Bring 2 litres of water to a boil and add remaining pandan leaves to water. Add 150g sugar to water (adjust to taste) Take mung beans out from steamer and remove the pandan strips. Add pandan leaves and mung beans to boiling water. Cook for 5 mins or until desired texture. Once they are slightly soft you can add in sweet potato starch mixture slowly as you stir. Remove from fire immediately once you are done and serve with lots of youtiao!
