🌽 Creamy Corn Cake (Water Bath Method) Ingredients 1 can sweet corn, drained 3 cups whole milk 3 whole eggs 1 can (14 oz) sweetened condensed milk 3 tbsp butter (room temperature) 2 cups all-purpose flour (sifted) Instructions Step 1: Prepare the Corn Base Place the drained sweet corn in a blender. Add about 1 cup of milk (from the 3 cups). Blend until smooth and creamy. Strain through a fine sieve, separating the liquid (“corn juice”) from the pulp. Use only the liquid for the cake. Step 2: Make the Batter Pour the strained corn juice back into the blender. Add: 3 eggs 1 can sweetened condensed milk Remaining milk (so it totals 3 cups) 3 tbsp butter Blend for about 3 minutes until smooth. Add 2 cups sifted flour into the blender. Blend again for 1 more minute until well combined. Step 3: Bake Grease and flour a baking pan. Pour the batter into the pan. Place the pan inside a larger baking dish (for a water bath). Add hot water to the larger dish, just enough to cover its bottom. Bake at 350°F (175°C) for about 50 minutes, or until firm. Step 4: Finish Let the cake cool slightly. Unmold onto a serving dish.
