Add salt, black pepper powder, red chili powder, and turmeric powder to the oil, stirring well. Let the spices cook for 1 minute to enhance their aroma. Carefully place the boiled egg halves cut-side down in the pan and fry for 3 minutes per side until golden and slightly crispy. Remove from the pan and set aside. Step 2: Prepare the Gravy Heat 3 tbsp oil in another pan over medium heat. Add mustard seeds and cumin seeds and let them crackle for 1 minute. Add chopped onions and sauté for 6 minutes, stirring occasionally, until golden brown. Add chopped green chilies and cook for 2 minutes. Stir in ginger-garlic paste and sauté for 2 minutes until fragrant. Pour in tomato purée and cook for 3 to 4 minutes, stirring occasionally until the oil separates. Add salt, red chili powder, coriander powder, black pepper powder, and turmeric powder, and cook for 4 minutes, allowing the flavors to blend. Pour in 1 cup water, mix well, and simmer for 5 minutes until the gravy thickens slightly. Step 3: Combine & Serve Gently place the fried eggs into the gravy, ensuring they are well coated. Let the curry simmer for 2 to 3 minutes to allow the flavors to infuse. Sprinkle kasuri methi and fresh chopped coriander on top for a fragrant finish. Serve hot with steamed rice, roti, or naan.
