In this video, I show you how I make my version of an Italian style Hot Sauce I labelled “A taste of Italy”. This sauce is mild, using freshly harvested pepperoncini peppers from my garden. The pepperoncini plant seeds were given to me by a cousin who sourced them from Italy. This ferment went for 10 weeks, I forgot about it and decided to finish it off. I added some of the brine to thin out the sauce, and to give it more of a pronounced Italian flavour I added organic dried Italian herbs (Basil, Oregano, Parsley, and Thyme). This made enough for 3 large 250ml (8.45oz) bottles. This tasted amazing, it’s not terribly hot but makes up for flavour with what it lacks in heat.
