This is a classic, juicy apple pie. Best apples for this pie are the Braeburn or Elstar apples. Ingredients: For the dough: 300g all purpose flour (2 ½ cup) 100g sugar (½ cup) ½ tsp salt 200g cold butter (1 cup) 1 egg For the filling: 8 apples (1.5kg or 3.3 ounce) 100g sugar (½ cup) 3 tsp cinnamon 2 tbs custard powder 50 g breadcrumbs (½ cup) 50 g raisins (1/3 cup) 1 egg yolk for the eggwash For the glaze: 2 tbs apricot marmalade 1 tbs hot water Method: Mix the butter with the sugar and add the flour, salt and the egg. Knead into a smooth dough. Wrap the dough in plastic wrap and let it rest for about 20 minutes in the refrigerator. Meanwhile, cut the apples into pieces of about 1.5-2 cm. Add the breadcrumbs, cinnamon, sugar and custard powder and mix well. Roll out the dough to approx. 30 cm around and place it in a springform tin with a diameter of 22 cm (9 inch). Press the dough around the spring form and cut the edges. Save the cut dough edges for the strips on top. Fill the sping form with the apple mixture. Roll the remaining dough and cut it in stips and place them diagonal on top of the pie. Brush the eggwash on the dough and bake for 1 hour at 170C (340F). After baking, brush a glaze op top, made of apricot marmalade and hot water. Enjoy with a dash of whipped cream on top.
