In this video, we continue examining the biological importance of water and its unique properties that support life. Water’s high polarity makes it an exceptional universal solvent, dissolving a wide range of substances essential to living organisms. Its high heat of vaporization allows water to absorb significant energy before transitioning from liquid to gas, playing a key role in temperature stability within the human body and the environment through processes like evaporation. In plants, cohesion and adhesion enable water movement through water-conducting cells, supporting the transport of nutrients in trees. Water's ability to ionize into positively charged hydrogen ions and negatively charged hydroxyl ions influences the pH of cellular environments. Hydrophobic exclusion helps non-polar substances like lipid bilayers in plasma membranes to form protective structures around cells, often integrating proteins and carbohydrate chains. Additionally, the low density of ice allows it to float in freezing weather, insulating organisms in aquatic environments and sustaining life under the ice.
