Place in the fridge for at least 24 hrs. Mushroom flavored olive oil · 50 ml (1.33 oz) olive oil · 3 g dried mushrooms (I recommend porcini) Blend ingredients in a blender then filter through a coffee filter. Keep in the fridge (if your olive oil solidifies add a small amount of other vegetable oil before blending). Green Tea Ice Make green tea (0.5 g/100 ml) then strain and place in the fridge. Cut up the ice to your desired sizes. Umami Martini: · 60 ml (2 oz) KI NO BI Kyoto Dry Gin · 15 ml (0.5 oz) Shirayuki Sake · Chill with green tea ice · Soy sauce-infused pickled mushroom · 3 drops of mushroom olive oil · 3 drops of soy sauce Chill the mixing glass with the green tea ice. Dump the ice, add gin and sake and stir with more green tea ice. Strain into a chilled martini glass, add a soy-sauce infused pickled mushroom and 3 big drops of mushroom olive oil, followed by 3 drops of soy sauce (on the oil drops).
