Welcome in, this is Charley from Pickles BBQ! Today we are doing a quick simple hot and fast pork butt or shoulder. It’s easy to do on any grill and well worth it. A 7.5 lb pork done in a bit over 5 hours plus rest. Easy enough to do in a day. We did a slight trim, seasoned it up and after adding pecan and peach chunks to some lit coals it was a matter of dialing the grill to 300-350 and just checking every once in a while until it was probe tender.
