चमचमीत Goan Style Masala Stuffed Brinjal 🍆 भरवा बैंगन l Bharleli Vangi #konkani @GoanSpiceHouse #stuffedbrinjal #eggplant #recipe #cooking #konkanifood #goanspicehouse #goanstyle #goanrecipe #vegrecipe INGREDIENTS: For Stuffing Masala Oil – 2 to 3 tbsp Garlic cloves – 7 to 8 Ginger – 1 inch Chopped onion – 1 big size Grated coconut – 1 cup Curry leaves Fresh coriander leaves – ¼ cup Tamarind – ¼ tsp Water as per requirement Dry Masala Powder Turmeric powder – ½ tsp Cumin powder – ½ tsp Dry coriander powder – 1 tsp Red chilli powder – ½ tsp Kashmiri chilli powder – 1 tsp Goan garam masala – ½ tsp Brinjal – 6 Besan – 3 tbsp or as per requirement Salt as per taste Oil – 3 to 4 tbsp (to shallow fry stuffed brinjal) Oil – 2 to 3 tbsp Cumin seeds – ½ tsp Crushed ginger garlic – 2 to 3 tbsp Finely chopped onion – 1 big size Curry leaves Finely chopped tomato – 1 medium size Ground coconut paste Water as per requirement Salt to taste Stuffed and shallow fried brinjal Hot water if required Finely chopped fresh coriander leaves METHOD/PREPARATION Step 1: For Stuffing Masala In a pan or kadai, heat oil. Add ginger and garlic and saute until the raw smell goes away. Add chopped onion and saute until it turns light golden. Now add grated coconut and roast until aromatic and light golden. Add curry and coriander leaves, and roast for 2 more minutes on a low flame. Once the grated coconut aroma is realized, switch off the gas and let it cool down completely. Transfer in grinder jar, add tamarind and all dry masalas mentioned above. add a little water and grind coarsely. Note: don’t add too much water. coconut ground masala should be thick and coarse. Step 2: Take 2 tbsp of stuffed masala in a bowl and add besan. Mix well without any lumps. add besan if required. Stuffing masala should be thick so that it can easily stuffed in brinjal. Step 3: Thoroughly wash, remove little stem and put 2 cuts to the brinjal. Stuffed masala properly and keep aside. Add oil to the pan, and shallow fry stuffed brinjal from all sides on low flame. Step 4: In a kadai, heat oil. Add cumin seeds, crushed ginger garlic, chopped onion and curry leaves. saute until translucent. add tomato and saute until soft. now add ground masala paste and add water to adjust consistency of gravy. I used ½ cup of water. Mix well and cover and cook on low flame for 5 to 6 minutes. after 6 minutes add salt to taste. Mix well and add shallow fried stuffed brinjal. Cook for 2 minutes on low flame. after 2 minutes slightly mix stuffed in gravy. Cover and cook on low flame for 2 to 3 minutes. open the lid and slightly mix well. add little water if gravy is too thick. cook for sometime on ow flame. switch off the gas and add finely chopped fresh coriander leaves. mix slightly in gravy and serve. Serve stuffed brinjal masala with steamed rice, chapati, pav or poi.
